Ingredients

  • 400 grams of green tomatoes or tomatillos
  • 1/2 white onion
  • jalapeno peppers or serrano peppers
  • cloves of garlic
  • Some optional fresh coriander sprigs
  • Salt to taste
  • 1/2 cup chicken broth optional

Step-by-step elaboration

  • To begin, we are going to peel the half white onion.
  • In the case of garlic cloves, we will leave them already peeled.
  • Then, we will peel the green tomatoes and wash them well.
  • We will also wash the chilies well.
  • In a small pot, we will heat a little water, in order to cook all the vegetables that we have listed previously. When you put the vegetables in the pot, the water level should not exceed the level of the other ingredients, so as not to take longer unnecessarily. The cooking that we will give to the vegetables will be light, just over ten minutes. If instead of keeping the vegetables fresh a little, you prefer that they are well cooked, you can leave them for a maximum of ¼ hour.
  • If you are using the cilantro, this is a good time to wash it. I prefer to disinfect it using water with a splash of vinegar. There, I leave it submerged for at least five minutes.

  • Have your blender on hand so that when the cooking time is up, you drain the ingredients and transfer them to process. If it is difficult for you to “fish” the ingredients, you can help yourself with a strainer. However, reserve some of the cooking water, just in case.
  • Add the washed coriander to the blender and season with a little salt, to taste. If you have decided to use the chicken broth to add more flavor to your sauce, add half a cup to the blender. You can also use a homemade vegetable broth.
  • If you have not planned to use any broth, but you think that the blender needs a little liquid to process the food better, then add a little of the cooking liquid.
  • When you have blended enough to get a nice consistency sauce, taste it. If necessary, correct the seasoning with a little more salt, and mix again.
  • That’s it. In principle, your green sauce is ready. However, there are those who prefer to cook the liquid again (very quickly) to intensify its flavor. You can do this in the same saucepan previously used, after cleaning any traces of water.
  • Serve your sauce hot or cold, as you prefer.

TIPS FOR PREPARING MEXICAN GREEN SAUCE

  • If you prefer a less spicy sauce, you can cut the chiles and remove the seeds and vein, before using them for this recipe.
  • You can also use other green herbs to add more flavor and perfume to your sauce, such as parsley.
  • For a more garlic-flavored version, you can cook both garlic cloves briefly in a griddle or skillet, before adding them to the blender. If, on the contrary, you do not like garlic, you can limit yourself to using a single garlic clove in this recipe.
